Spicy Pasta and Cheese with Italian Sausage and Mushrooms

Ingredients

  • 3 Tbsp butter

  • 1 1/2 Cups onion (chopped)

  • 3 Cloves of garlic (minced)

  • 1 1/2 Tsp ground cumin

  • 1 1/2 Tsp ground coriander

  • 1/4 Cup flour

  • 2 Cups whole milk

  • 3 1/2 Tbsp chipotle

  • 1/4 Tsp cayenne

  • 1 1/2 Tsp salt

  • 2 Cups dried tomatoes

  • 1 1/2 Cups cheese (mix of asiago, cheddar, swiss, mozzarella, and provolone)

  • 1 lb italian sausage

  • 8 oz crimini mushrooms (sliced)

  • 1 lb pasta

  • 1/2 cup parmesan cheese (grated)

Steps

  1. Pre-heat oven to 325ºC

  2. Cook the pasta as per boxed instructions in a pot

  3. Brown the sausage and mushrooms in a skillet

  4. Remove the cooked sausage and mushroom from the skillet into a side dish to hold for later

  5. Add the butter to the skillet and soften the onion and garlic

  6. Stir in the cumin, coriander, and flour to coat

  7. Stir in the milk and cook down for 2-4 mins

  8. Stir in the chipotle, cayenne, salt, tomatoes, and cheese blend. Cook for 2-4 mins

  9. Stir in the cooked sausage, mushrooms, and pasta

  10. Once mixed thoroughly, move the contents of the skillet into a casserole dish and top with the parmesan cheese

  11. Cook in the oven for 60 mins
